Renowned restaurateur Kurt Zdesar’s concept for the chic version of the shack-style fish restaurants found on the beaches of Florida will be brought to fruition with Phelan Construction who has been awarded the fit-out contract through the Noble Organisation who work closely with Kurt. The £500k contract starts in early April and is due to complete mid-June ready for the grand opening. The new concept should see some interesting fit-out aspects which will create the high standard that the client is looking for.
The sustainability of the restaurant is an important factor for Kurt who stated;
“I want to see every single product and know who is catching it, where it has come from and how it is caught before it makes it onto the menu,”
“We are at the early stages of that process but the key is that everything on our menu will be a product that is not over-fished, not at any sort of risk and that it has plentiful stocks and they are continuing to replenish naturally.”
